Ingredients:
1 cup gluten-free flour blend
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
1 cup non-dairy milk (such as almond milk or soy milk)
1 tablespoon apple cider vinegar
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
Instructions:
In a mixing bowl, combine the gluten-free flour blend, baking powder, baking soda, salt, and sugar.
In a separate mixing bowl, whisk together the non-dairy milk and apple cider vinegar. Let it sit for a few minutes until it curdles slightly.
Add the melted coconut oil and vanilla extract to the milk mixture and stir to combine.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Heat a non-stick skillet or griddle over medium heat. Once the skillet is hot, ladle 1/4 cup of batter onto the skillet for each pancake.
Cook the pancakes until the edges start to dry and the surface is bubbly. Flip the pancake and cook until the other side is golden brown.
Repeat with the remaining batter until all the pancakes are cooked.
Serve the pancakes with your favourite toppings, such as fresh fruit, maple syrup, or vegan butter.
